
We only use high quality musts from selected vineyards in the supply chain. The soil on which our vines grow is perfect for growing vines with a strong character. Each phase of preparation and aging is treated with attention that has its roots in the mists of time, in the tradition handed down for generations.
Our grapes are Trebbiano, Lambrusco, Sangiovese, Albana, Ancellotta, Fortana and Montuni.
After pressing, the grape must obtained from these vines is partially fermented and cooked. It remains in the barrel and matures patiently before being used for the production of balsamic vinegar. Furthermore, balsamic vinegar of Modena contains a part of wine vinegar.
Our Balsamic Vinegar of Modena is born from the balance between the sweetness of the must and the acidity of the vinegar (6%), offering an inimitable taste and aroma.
To distinguish our balsamic vinegars we assign a progressive number of “Medals”. The more medals there are, the richer the story it tells.
