Recipe: Golden Roast Chicken with Mediterranean Flavors and Balsamic Glaze

In this recipe, we’ll guide you through the preparation of a roast chicken with crispy skin and succulent meat, enriched with the aromas of Mediterranean herbs and a glaze of Balsamic Vinegar of Modena that enhances its flavour. Ingredients:

Preparation:

  1. Chicken Preparation:
    • Remove the chicken from the refrigerator at least an hour before cooking.
    • Rinse the chicken under cold running water and pat dry with paper towels.
    • Brush the chicken with 2 tablespoons of extra virgin olive oil, salt, and pepper.
    • Stir the rosemary, sage, and garlic cloves inside the chicken.
  2. Browning and Cooking:
    • Heat the remaining 2 tablespoons of oil in a baking dish.
    • Place the chicken in the pan and sear on all sides until golden brown.
    • Bake the chicken at 180°C (350°F) for about 1 hour and 15 minutes, or until the meat is cooked through and the skin is crispy.
    • During cooking, baste the chicken with its cooking juices every 15-20 minutes.
  3. Balsamic Vinegar Glaze:
    • While the chicken is cooking, prepare the balsamic glaze.
