Rice salad is a summer classic, a versatile and colourful dish that lends itself to a thousand interpretations. In this recipe, we offer a fresh and light version, with crunchy vegetables, Taggiasca olives, and a touch of Balsamic Vinegar of Modena that enhances the flavours. Perfect for a packed lunch, a picnic, or a casual dinner.

Ingredients:

  • 300 g Carnaroli rice (or Arborio, Vialone Nano, Baldo)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 carrot
  • 100 g fresh peas (or frozen)
  • 100 g pitted Taggiasca olives
  • 1 fresh spring onion
  • 4 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • Sea salt to taste
  • Black pepper to taste
  • IL DENSO 3 MedaglieBalsamic Vinegar of Modena to taste.

Preparation:

  1. Rice preparation:
    • Cook the rice in plenty of boiling salted water, following the cooking times indicated on the package.
    • Drain the rice and refresh it under cold running water.
    • Transfer the rice to a large bowl.
  2. Vegetable Preparation:
    • Wash and dice the peppers, zucchini, and carrot.
    • Boil the peas in boiling salted water for a few minutes, until tender.
    • Drain the peas and refresh them under cold running water.
    • Slice the spring onion into thin rounds.
  3. Condiment:
    • In a bowl, combine the extra virgin olive oil, lemon juice, salt, and pepper.
    • Pour the dressing over the rice and mix well.
    • Add the vegetables, Taggiasca olives, and spring onion.
    • Toss gently to combine all the ingredients.
  4. Plating:
    • Arrange the rice salad on serving plates.
