Ingredients:
- 300 g Carnaroli rice (or Arborio, Vialone Nano, Baldo)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 carrot
- 100 g fresh peas (or frozen)
- 100 g pitted Taggiasca olives
- 1 fresh spring onion
- 4 tablespoons extra virgin olive oil
- Juice of 1 lemon
- Sea salt to taste
- Black pepper to taste
- IL DENSO 3 Medaglie – Balsamic Vinegar of Modena to taste.
Preparation:
- Rice preparation:
- Cook the rice in plenty of boiling salted water, following the cooking times indicated on the package.
- Drain the rice and refresh it under cold running water.
- Transfer the rice to a large bowl.
- Vegetable Preparation:
- Wash and dice the peppers, zucchini, and carrot.
- Boil the peas in boiling salted water for a few minutes, until tender.
- Drain the peas and refresh them under cold running water.
- Slice the spring onion into thin rounds.
- Condiment:
- In a bowl, combine the extra virgin olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the rice and mix well.
- Add the vegetables, Taggiasca olives, and spring onion.
- Toss gently to combine all the ingredients.
- Plating:
- Arrange the rice salad on serving plates.
